1/4 c Chopped fresh basil or 1 tsp

Ok, what comes to mind when you think P.O.T.O.?There’s elements of: formal, refined, scary, tender, and mystery (masks & all). I would have a several course meal that started with hors’odervers & a coctail hour (could be non-alcohol), with champagne glasses, gloved waiters in tuxedos, with a cape, mask & white gloves, like the actors. The guests should be dressed formally like the patrons of the opera. Have the music from the show playing softly in the background-could be a CD or a small band or a pianoist. The hors’odervers would be served on silver platters (you can get silver plastic at party stores that are beautiful) I’d have formal table settings..beautiful table cloths & cloth napkins (either folded fancily or in napkin rings) with several forks, spoons, glasses (water, wine, etc) along with several plates. Start with maybe a fish appetizer (shrimp coctail, crab meat, etc.), then a sorbet to clear the palate. Next, a small fancy salad followed by a soup-anything from a beautiful cold plumb soup (boil fresh Italien plumbs with a little water until very soft. Soup will be dark pink and delicious serve cold with a little cream) or, a consume, a pumpkin, squash–any light soup. People come by, pick up a glass, scoop up some mashed potatoes (self serve) into the martini glass, top it with butter, sour cream, bacon bits, chives, whatever. This IS the cat’s meow.

we are making a homemade pasta dinner for 100 with a salad, italian wedding soup(made with spinach, chicken boulion, parmesan cheese, ground turkey or beef, a few eggs and like 3 boxes of the acini d’pepe noodle for the entire group) baked ziti, and a simple shrimp scampi (melt one and a half pound of butter in a pan add one cup minced garlic and 1/4c crushed red peppers sautee 3-4 minutes mix in two 2lb bags peeled frozen shrimp which have been thawed under runnning water and cook until pink or until warm if they are pre cooked. mix in 2 Cups italian style bread crumbs and serve over 6lbs angle hair.) then fruit cocktail and italian cookies(from my local grocery store bakery). the whole thing comes together very well as a meal and only cost us about per person!another idea is to do a holiday dinner theme meal with whole turkeys and ham out on platters then just make mashed potatoes, cream corn, green beans, cucmber salad. whatever you usually have at easter or thanksgiving
or a southern style meal with fried chicken, mashed potatoes, corn on the cob, greens, biscuits and gravy. finish with pies for dessert!
think of anything used for big family get togethers in different places. depending how formal you do or dont want to be, you can think about a picnic theme, a clambake, even a potluck!

Sam’s Club just released a booklet for the holiday entertaining – and it has all kinds of wonderful ideas in it for parties. Ask at the front desk at Sam’s to get one. My son got married last year – and we did the whole thing from Sam’s. We did the pinwheel sandwiches, the crab rangoons, tiny pig’s in the blankets (which by the way everyone LOVES) with different dipping sauces and quiches and taquitos. Shrimp, Meat, cheese, fruit and veggie trays. They have a box now that has five different kinds of cocktail crackers in sleeves, so you can make a really pretty presentation. We served the spiral sliced ham with some of their little rolls and a nice Dijon mustard, too.Another thought though – since you are having your wedding at 1:00 – you really don’t have to serve lunch. You can get away with just serving cake, nuts and candies – punch & coffee – and dessert reception. However, to really make it splashy – Sam’s has a chocolate fountain for like .00, and they sell the big can of chocolate and those big huge strawberries. You could serve pound cake squares, banana chunks, strawberries and pretzels with the chocolate fountain. Everyone loves this, and it looks so pretty and decadent. Good Luck!

Its getting down to crunch time and we dont have any food yet. Here is what we are doing: Wedding at church, reception at church gym, then kind of a “second” reception/party at my aunts house down the street on a lake (so they can have alcohol there.) The first one will be probably like 1:00 or something. My mom wanted to have it a lighter easy type of food at the first one, then more of a dinner at the second one. The reason is that there will be less people at the second one (his family does not drink and a lot would be uncomfortable there so they can leave after the first one which will have the cake and stuff) and it will be more relaxed so we can get a little more messy there (i’m clumsy and would end up spilling on my dress if we had messy food at the first one) plus it will be around dinner time!
Now for the question: What would be a good food for the first one? The cake will be there. My mom suggested a fancy sandwich bar thing but I dont want people to feel completely gyped if they only attend the first reception and frankly our budget is nearly used up so it would have to be something FAIRLY inexpensive, but i just think people might see sandwiches as completely tacky or something. Could we just have appetizers and cake or something? I forgot to mention my mom doesnt want to be cooking much at all and no cooking during it if possible because she doesnt want to miss anything. I just have no idea what to do
For the second one my mom wanted to get italian catered, then to save money for the small kids, just buy a bunch of pizzas for them to eat (they’d like pizza better and it would save money anyway)

For the first mini reception I would serve appetizers, punch, and cake. Make sure you give them program menus with a note that say something like you’re welcome to join us for a hours devours (sp?) and cake reception so they know to eat before hand. If you already have the programs print those out in a nice fancy font and just include the paper inside the programs. Then for the dinner at your mothers house I wouldnt use italian catering. Italian has a lot of weird ingredients a lot of people either don’t like or are allergic to. You could have one italian dish but I’d have something else incase people don’t like that. Id probably have a ham and people could carve off that if you like. It takes hardly any effort to cook. If not, try to find someone to cater that could supply 2 different entrees and like 2 sides. Don’t prepare anything yourself … get ready-made trays from a local deli or supermarket, or big frozen boxes of hors d’oeuvres that you can heat up right before serving.It will probably cost you just as much as it would to buy the individual ingredients and make everything yourself. And even if it is a little more expensive, it will certainly be worth it in terms of your time and your peace of mind.
I would also recommend NOT putting out and serving the food yourself. Also, don’t rely on a family member or friend/bridesmaid to do this, because they should be enjoying the party and not working. Hire a college kid, someone off Craigslist, a sibling’s friend who wouldn’t otherwise be invited to the wedding, or a waiter or two from a local cafe who’s off on your wedding day and wants some extra cash. Pay them a few bucks, or send them home with the leftovers or a case of beer or something. Or trade work with someone … maybe ask a neighbor to help you out, and in return you will mow their lawn for a month. (Just an example.)

Pigs in a blanket, sausage balls, ham rolls (with cream cheese and green onion in the middle), salami rolls (with cream cheese and sweet pickle in the middle), chicken and tuna salad sandwiches cut in half (be careful or the bread will dry), fruit tray with dip made out of cream cheese and marshmallow creme, vegetable tray with dip, tortilla chips served with dip made out of cream cheese and can chili, mushroom bread wedges…that’s all I can think of that we had right now. It was all pretty simple to do and fairly cheap…and we also had a variety of sodas (lol…my dad is a preacher so no alcohol!) and I made “white wedding” punch…went over very well! Good luck!

1 batch
1 cup fresh rose petals (must never have been sprayed with any chemicals)
3/4 cup water
1 lemon, juice of (1/4 cup)
2 1/2 cups sugar
1 package pectin (ie. Sure Jell)
3/4 cup water1. Puree rose petals, 3/4 cup water and lemon juice in blender until smooth.
2. Slowly add sugar.
3. Blend till all sugar has dissolved; (leave in blender) Stir 1 package pectin (ie. Sure Jell) into 3/4 cup water, bring to a boil, and boil hard for 1 minute. Pour mixture into blender with rose petal mixture until well blended.
4. Do this very quickly – it sets up FAST!! Pour into baby food jars.
5. Let set for 6 hours, till firm.
6. Will keep one month in refrigerator.

1 large watermelon
1 cantaloupe, halved and seeded
1 honeydew melon, halved and seeded
2 (15 ounce) cans mandarin oranges, drained
2 (20 ounce) cans pineapple chunks, drained
2 cups halved fresh strawberries
2 cups seedless grapes
1/2 cup water
1/4 cup white sugar
2 tablespoons grated lemon zestDirections:
With a large, sharp knife, remove the top 1/4 section of the watermelon. With a melon baller, scoop flesh from inside of watermelon, removing as many seeds as possible. Leave 1/2 inch of flesh inside the shell of the watermelon. Scoop cantaloupe and honeydew in the same manner, removing as much flesh as possible, and discarding the rinds. Refrigerate fruits separately until ready to assemble.
In a small saucepan over medium-high heat, bring water and sugar to a boil. Remove from heat, and continue stirring until sugar has completely dissolved. Add lemon zest, and set aside to cool.
To serve, place watermelon balls, cantaloupe, honeydew, oranges, pineapple, strawberries, and grapes, in a large mixing bowl. Pour syrup over, and toss thoroughly. Transfer mixture to watermelon bowl, and serve. Set aside any fruit mixture that will not fit. There will be enough fruit to refill the bowl.

What are some foods I can make ahead of time for a wedding that are simple but elegant and filling?-
ANSWER:
Okay, this is totally doable. I’m listing some here that are best served cold – that way, you don’t have to worry about chaffing dishes and such. You might need some trays underneath the dishes that can hold ice, but that’s the worst you’ll have to worry about. Hope you like some of these:Beautiful, nontraditional shrimp cocktail. Get some frozen, cooked, peeled and deveined shrimp and let it thaw/marinate in Italian dressing. Drain and put in a beautiful bowl. It’s super easy and soooo delicious. Everyone at our wedding loved this.
Antipasto or Italian salad. You can make this yourself, but it’s even easier if you call up your best local pizza place and order a few the day before the wedding. It saves a lot of time and probably doesn’t cost any more than buying all of the ingredients yourself. If you want the tuna salad with it, have them put in on the side. Mix the salads together in a huge bowl, put the tuna is a pretty bowl off to the side (if you’re including it), and provide a selection of salad dressings.
Then there are the standard fruit and cheese platters – everyone always loves these, and if you take time with the presentation, they can look really elegant.
One dish I make that always goes over really well is sort of a crab dip/loaf. Mix a couple of blocks of cream cheese with a small package of imitation crabmeat and about five diced dill pickles (the long wedge slices). This is if you want to serve it as a loaf; if you want it to have more of a dip consistency, add a little sour cream and maybe a little of the pickle juice until you get the consistency you want. Serve with nice crackers.
Pasta salad looks festive and is very filling.
Consider slicing a cooked chicken breast and serving it cold. A little different from traditional coldcuts and super yummy. You can get the precooked rotary chicken from your local supermarket for this to make it even easier. Serve with a selection of rolls, cheeses, and condiments.
For bread, think of things that are easy and can be served at room temperature – denser rolls and breads that are more hearty and less fluffy/flaky work well. You can put some regular butter and some honey butter out in pretty dishes.

I am getting married in June 2009 on the beach in FL. Our reception is going to be held at a boat club by the water and our colors are brown and pink. We are trying to find food that we can make ourselves and serve. We have had a friend offer to do bar-b-que but were also thinking of doing a chocolate theme or finger foods. Any suggestions?
To clarify, I didn’t mean having pink and brown food necessarily, that would look odd. I was thinking more along the lines of if we have barbeque, what kind of finger foods would go well with that?

It really depends on what you want to do – you can serve a full meal and do BBQ, or you can have a variety of finger foods along with some chocolate. But, I don’t think that I would do a chocolate theme – that would be a lot of sweets.
If you did a BBQ I would suggest doing some BBQ chicken and/or steak. I would stay away from anything to messy like ribs. The last thing you want is to get something on your dress.
If you did the BBQ then you would just have to come up with some side dishes to serve with it – bread, rolls, green salad, potato salad, pasta salad, cornbread, roasted veggies, etc.
If you decide to do finger foods/appetizers you could always give your guests a wide variety of selections to choose from like; Baked Brie, Cheese and Crackers, Petite Meatballs, Veggie tray, Fruit tray, chicken wings, devilled eggs, stuffed mushrooms, shrimp cocktail, spinach dip, mini quiche, pinwheel sandwiches, etc. You can go over to Costco/Sam’s Club – they have lots of frozen appetizers that they sell for a fairly good price.

mini quesadillas, tacos, hot wings,mini meatballs with BBQ sauce(yum).Roasted chicken is a good idea, Curry chicken skewers(recipe below) is another. Make a nice rice pilaf or spanish rice that will go with everything.
If you are going to be doing all the cooking, I would limit it six appetizers and three dinners that have side dishes that interchange.
Another option would be to do all appetizers and have like twelve different type and a couple desserts.
~Curry chicken skewers~
1 lb chicken tenders or chicken breasts, cut into long strips
3 garlic cloves, minced
12 stalks green onions, minced
2 tablespoons fresh lemongrass, minced
2 tablespoons curry powder
1 tablespoon honey or light brown sugar
1 tablespoon soy sauce
2 teaspoons fish sauce
2 teaspoons fresh lime juice
1 teaspoon paprika
1/4 teaspoon black pepper
1/4 cup water
2 tablespoons vegetable oilIn a large bowl or ziplock bag, put chicken meat, garlic, onion, lemon grass, curry powder, sugar, soy sauce, fish sauce, lime juice, paprika, black pepper and water, mix well, add vegetable oil, mix well.
Refrigerate overnight (or at least 4 hours.)When ready to cook, skewer chicken meat with soaked wooden skewers and cook on grill with low heat till both sides are golden brown. (About ten minutes)

Do you have a Sam’s Club nearby??? Seriously, they have all sorts of great appetizers, like “deli spirals”, also known as tortilla rollups and little quiches. You can do a fruit and cheese tray. Something like this would make it much easier since you are already doing the flowers, cake, etc. You all want to enjoy the day, so let someone else do some of the work (ie Sam’s club or a deli at your local grocery store!)
